Chef Gochenour to teach course

Chef Gochenour will be teaching this eight-week Food Prep 1 course at ENMU-Ruidoso, beginning Tuesday, Oct. 11.

The Food Prep I course will be held every Tuesday from 1-5:30 p.m. The course is for three hours of credit and one lab credit or can be taken without receiving credit and prepares students for either a career in the hospitality and tourism food service management field or culinary arts. It includes discussions of various styles of cuisine and proper methods of food and equipment handling. Introduction to kitchen design, workflow, techniques, and applications of basic food production principles will also be discussed.

Brendan Gochenour is the executive chef at the Ruidoso Jockey Club and the founder of the White Apron Society, a community of local chefs who joined together for the love of cooking. During the 2012 Little Bear fire of Chef Gochenour and the White Apron Society provided food to firefighters and displaced residents.

The cost of the for the credit course is tuition, fees and $100 additional food supply fee.
